Fiesta Frittata

Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!

A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.

Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.

Fiesta Frittata Recipe

To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

Description

This Frittata is packed with vegetables, delicious and quite filling!


Ingredients

Scale
  • 6 Pete & Gerry’s organic eggs
  • 1/2 can black beans (rinsed and drained)
  • 1/2 cup brown rice
  • 1/2 cup shredded cheese
  • 1/2 small yellow onion, diced
  • 1/2 tomato, diced
  • 1/2 large bell pepper, diced
  • 1/4 teaspoon garlic salt
  • 1 teaspoon butter or olive oil
  • Optional toppings: Avocado slices, pico de gallo, salsa, plain Greek yogurt

Instructions

  1. Whisk eggs together in a large bowl. Add black beans through garlic salt.
  2. In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
  3. Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)
  4. Reduce heat to low and cover with a lid until the top of the frittata fully sets.
  5. Slice immediately and serve with desired toppings. Enjoy!

Fiesta Frittata Easy Recipe

We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

    My boyfriend and I pinch our pennies in order to be able to buy local eggs at the farmers market on the weekend. We ate dinner at the farm where our eggs come from over the summer and once we saw the awesome living conditions that the hens had and all the care that the farmer put into his farm and chickens, it’s hard to eat other eggs! Happy hens also make much tastier eggs!

    I always eat ethical eggs. It costs more, but it is absolutely worth it to me to make sure I am not ingesting suffering. This seems like a great company that I would love to support.

    Happy chickens lay better for you, more delicious eggs. My favorite way to enjoy eggs is either poached or over easy, breakfast, lunch or dinner, those runny yolks get me every time.

    I’m totally hooked on toast with mashed avocado and a fried egg on top! I cook my eggs in coconut oil and love it! I top it off with black pepper and garlic powder. Yummmm. Also, I like a mix of sweet potatoes, fried egg, avocado & pepper/garlic powder. All so good and I don’t feel terrible about eating it!

    My husband and I eat a lot of eggs. We love getting eggs from a local farmer. They are so much better than store bought for some reason. I typically have scrambled eggs with red hot and avocado. Love them! Make them every morning.

    I eat a hard boiled egg almost every day as a snack. When I’m feeling more indulgent, I’ll turn a few eggs into deviled eggs. So good!

    My new favorite way to enjoy eggs are by fixing egg muffins! I make them Sunday evening to have them ready to pop in the microwave and eat the rest of the week. Put your favorite veggies in a muffin tin, pour over with beaten eggs and bake in the oven for 20 minutes. Great way to have a healthy ‘grab and go’ breakfast that will hold you over for hours.

    I love frittatas because you can add so many different ingredients to them! It’s so important to know how your food is grown, raised, prepared. The end product is what you consume and if there are a bunch of chemicals and inhumane practices that go into your food, your body is what pays the price.

    I love getting eggs from the local farmers’ market and taking them home to enjoy immediately! My favorite way to eat them is scrambled with cream cheese, zucchini, and salsa.

    I think it is so important for us to make sure the animals that feed us are treated in a humane way. Plus, everything tastes so much better! My favorite way to wat eggs is simply scrambled (the slow way!)

    I love a simple scrambled egg so the quality and freshness is SUPER important! My 15 month old daughter eats a lot of eggs too, so I only want the best for her, local/ organic/ naturally raised is very important when I choose egg products.

    I love throwing a lightly fried egg on top of a salad (or open faced sandwich) to boost my protein for the day and supplement salad dressing (drippy egg = the best!)

    I eat more eggs than a normal person, and generally love them fried. Over easy on toast or over hard are my favorites.

    I try to buy my eggs, cheese, and most of my meat from local farms whenever I can. And I love making fried dippy eggs, especially with fresh, local eggs and the sweet potato biscuits at the local farmer’s market.

    I. love. eggs. I eat them almost daily. You can definitely tell the difference between organic, cage-free eggs over massed-produced. The former is more ethical, so I always buy local/organic when I can! I have been LOVING scrambled egg whites with sweet potato and apple chicken sausage for breakfast/lunch/dinner lately. The combo is so, so good!

    my favorite way is to fry an egg, pour hot sauce over it, and eat it on a piece of toast! So yummy and healthy too!
