Ginger Beet Smoothie

A little more than a month ago, I shared my go-to green smoothie recipe with you guys. That smoothie is probably still my favorite, but this afternoon, on a short reprieve from work, I headed home to break out the blender and try a new combination. This ginger beet smoothie is so healthy and delicious!

Green Smoothie Ingredients

My main motivation? I wanted to try incorporating cabbage into my smoothie!

When Ryan and I were grocery shopping on Sunday, on the back of a bag of juicing apples was recipe for an apple cabbage juice that intrigued me. If cabbage tasted decent enough in a fresh juice for someone to publish a recipe that used it on a bag of apples, I figured it must blend well with other flavors.

I set out to use the cabbage in my smoothie but made sure to include my go-to green smoothie ingredients – ginger and lemon – as well. Ginger and lemon are my favorite add-ins because they seem to blend well with all different kinds of fresh fruits and vegetables.

In this particular smoothie, the flavor of the ginger and fresh beet took over which was fine by me!

Description

I set out to use the cabbage in my smoothie but made sure to include my go-to green smoothie ingredients – ginger and lemon – as well. Ginger and lemon are my favorite add-ins because they seem to blend well with all different kinds of fresh fruits and vegetables.


Ingredients

Scale
  • 1 apple, chopped
  • 1 large carrot, chopped
  • 1 fresh beet, washed, scrubbed and cut into wedges
  • Juice of 1 lemon
  • 1/2 small head of cabbage, core removed
  • 1 large handful fresh kale
  • Fresh ginger, to taste (I used four relatively thin slices of fresh ginger)
  • 1 1/2 cups cold water (may use more or less to reach desired consistency)

Instructions

  1. Place all ingredients in a high-powered blender
  2. Blend until everything is completely smooth and thin enough to to drink through a straw

Ginger Beet Smoothie

If you have a juicer at home, you could easily use the same ingredients to make a delicious juice, but I enjoyed my smoothie with the fiber still in tact.

And a quick note about this smoothie: If you don’t have a high-powered blender, you may need to chop the fruits and veggies up very finely and blend it for quite a while. The texture will still likely not be very smooth, but the flavor should be the same.

    I love the color of that smoothie! I am obsessed with a green smoothie I have been making now for a few weeks. Almond milk, Kale, Spinach, Apples, Lemon, Frozen Bananas and Flax Seeds. I have had it so many times I can imagine the taste as I tell you the ingredients. 🙂 I will definitely try this one out.
    p.s. what blender do you have? I need a new one 🙂

      I have a Vitamix. Ryan and I bought it with credit we had after making some returns at Bed, Bath and Beyond after our wedding. 🙂

        I LOVE our Vitamix! I wanted one for the longest time but resisted buying due to the price. My husband got so sick of my lusting after one he told me to just buy one already! LOL.

      I use a Vitamix but I’ve used a Blendtec blender before, too, when I did the giveaway with Stonyfield yogurt and gave one away to a reader. I honestly cannot tell the difference between the two blenders, so I’d say get whichever one is on sale!

    I am definitely intrigued by this combo – but did you use a cooked beet or a raw beet? I usually roast my beets, I was curious if you used a rock hard raw beet or a cooked beet? Thanks!

    I’ve read that using cooked/roasted beets works in smoothies if you don’t have a high powered blender. Been meaning to test that theory so thanks for giving me the motivation to do it 😀

    Smoothies are like juice cleansing diet that are very healthy. Trying new ingredients is good as you tend to discover new vitamin and minerals that can help you stay fit and strong.

    Mmmmm looks and sounds delicious, Julie! I have a juicer but have no time these days to take it out, clean it, store it, etc. (super small counter space and a baby, lol) so I haven’t used it for some months. But making it into a smoothie is a great idea! It definitely would make a great substitute for a meal due to all the fiber too. 🙂

    Hi Julie! I’ve experimented with healthier mug cakes as well, and I’ve found that a scoop of non-fat plain greek yogurt (I love chobani) really adds some fluff and moisture the recipe! I”m excited to try your breakfast cake when you get it right!
