My main motivation? I wanted to try incorporating cabbage into my smoothie!
When Ryan and I were grocery shopping on Sunday, on the back of a bag of juicing apples was recipe for an apple cabbage juice that intrigued me. If cabbage tasted decent enough in a fresh juice for someone to publish a recipe that used it on a bag of apples, I figured it must blend well with other flavors.
I set out to use the cabbage in my smoothie but made sure to include my go-to green smoothie ingredients – ginger and lemon – as well. Ginger and lemon are my favorite add-ins because they seem to blend well with all different kinds of fresh fruits and vegetables.
In this particular smoothie, the flavor of the ginger and fresh beet took over which was fine by me!

Description
I set out to use the cabbage in my smoothie but made sure to include my go-to green smoothie ingredients – ginger and lemon – as well. Ginger and lemon are my favorite add-ins because they seem to blend well with all different kinds of fresh fruits and vegetables.
Ingredients
- 1 apple, chopped
- 1 large carrot, chopped
- 1 fresh beet, washed, scrubbed and cut into wedges
- Juice of 1 lemon
- 1/2 small head of cabbage, core removed
- 1 large handful fresh kale
- Fresh ginger, to taste (I used four relatively thin slices of fresh ginger)
- 1 1/2 cups cold water (may use more or less to reach desired consistency)
Instructions
- Place all ingredients in a high-powered blender
- Blend until everything is completely smooth and thin enough to to drink through a straw
If you have a juicer at home, you could easily use the same ingredients to make a delicious juice, but I enjoyed my smoothie with the fiber still in tact.
And a quick note about this smoothie: If you don’t have a high-powered blender, you may need to chop the fruits and veggies up very finely and blend it for quite a while. The texture will still likely not be very smooth, but the flavor should be the same.
Enjoy!

I love the color of that smoothie! I am obsessed with a green smoothie I have been making now for a few weeks. Almond milk, Kale, Spinach, Apples, Lemon, Frozen Bananas and Flax Seeds. I have had it so many times I can imagine the taste as I tell you the ingredients. 🙂 I will definitely try this one out.
p.s. what blender do you have? I need a new one 🙂

I have a Vitamix. Ryan and I bought it with credit we had after making some returns at Bed, Bath and Beyond after our wedding. 🙂
Laura@SneakersandSpatulas says
I LOVE our Vitamix! I wanted one for the longest time but resisted buying due to the price. My husband got so sick of my lusting after one he told me to just buy one already! LOL.

Jenn,
Can you do a review or a spotlight on your blender? I’ve been wanting to purchase a blender for smoothie purposes but am a little intimidated by all the options. I think this would a be a great post if you don’t have one on this subject already.

Do you use a Vitamix or Blendtec? I remember a Blendtec giveaway you did a while back. I pining away for one of the fancy blenders.
Julie @ Peanut Butter Fingers says
I use a Vitamix but I’ve used a Blendtec blender before, too, when I did the giveaway with Stonyfield yogurt and gave one away to a reader. I honestly cannot tell the difference between the two blenders, so I’d say get whichever one is on sale!

This looks so good! I usually like juice > smoothies, but I would love to try this combo in a juice. Beet and ginger is one of my favorite combos!
Laura @ RunningJunkie says
I have to say, I love smoothies, and I like beets, but I’m a bit skeptical about this smoothie……I might get it if I was at a juice bar or something but I don’t know if I’d make it.
Hannah @ CleanEatingVeggieGirl says
This is the prettiest smoothie I have EVER seen! I definitely need to start adding beets to mine :).
Coty and Mariah@quirksandtwists says
What a yummy combo, I always want to use ginger in my smoothies. Yum!
Amanda says
I am definitely intrigued by this combo – but did you use a cooked beet or a raw beet? I usually roast my beets, I was curious if you used a rock hard raw beet or a cooked beet? Thanks!
Stacie @ SimplySouthernStacie says
I love the color of this smoothie, but I just can’t with ginger. Beets and I are kind of in an introductory phase right now.

I’ve read that using cooked/roasted beets works in smoothies if you don’t have a high powered blender. Been meaning to test that theory so thanks for giving me the motivation to do it 😀

Try adding mint to your green smoothies! Fresh mint and the juice of an entire lemon are green smoothie game changers!

Smoothies are like juice cleansing diet that are very healthy. Trying new ingredients is good as you tend to discover new vitamin and minerals that can help you stay fit and strong.

sounds so daring! I would be nervous to try it!
Ellie@Fit for the soul says
Mmmmm looks and sounds delicious, Julie! I have a juicer but have no time these days to take it out, clean it, store it, etc. (super small counter space and a baby, lol) so I haven’t used it for some months. But making it into a smoothie is a great idea! It definitely would make a great substitute for a meal due to all the fiber too. 🙂
Kaelene @Unlocking Kiki says
The color of the smoothie alone makes me want to try it! I need to get more creative with my green smoothies and this gives me some new ideas to try!
Anna says
Hi Julie! I’ve experimented with healthier mug cakes as well, and I’ve found that a scoop of non-fat plain greek yogurt (I love chobani) really adds some fluff and moisture the recipe! I”m excited to try your breakfast cake when you get it right!
Tayler Bray says
I didn’t know there was a certain type of apple that was a ‘juicing apple.’ Which kind do you use for that? My boyfriend and I are getting into juicing and buying him a juicer for Valentine’s Day.
Kim @ Roaming Raspberry says
I just bought some beets today so i’ll have to try this. I bought some orange beets too. Have you ever tried/seen those before? Not sure what to expect from them! 🙂 Thanks for the recipe Julie.
