Whole Wheat Pumpkin Pancakes (3)

When it comes to pancakes, I’m usually a protein pancake kind of gal, but today I was feeling way too lazy to clean the immersion blender I typically use when I make protein pancakes with oats.

Yes, today’s recipe was born out of my desire to keep breakfast clean up to a minimum. Whatever works!

I made a batch of whole wheat pancakes and amped up the flavor a bit with pumpkin and honey and the end result tasted like fall on a plate. The perfect lazy Sunday morning pancakes… on a Friday.

Honey Whole Wheat Pumpkin Pancakes

Description

Wanting to keep clean up to a minimum? Enter in Honey Whole Wheat Pumpkin Pancakes!


Ingredients

Scale
  • 1 cup whole wheat flour
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1 egg
  • 1 cup milk
  • 1/4 cup canned pumpkin
  • 2 tablespoons honey

Instructions

  1. Combine all dry ingredients in a bowl and stir
  2. Add egg and milk to dry ingredients and stir
  3. Add pumpkin and honey to pancake batter and stir until fully combined
  4. Pour batter onto a pan or griddle sprayed with cooking spray and cook on low-medium heat until sides start to bubble (about 3 minutes)
  5. Flip pancakes and cook for an addition 1 – 2 minutes and serve topped with syrup, chopped nuts, fruit or chocolate chips

Workout

Before breakfast, Ryan and I headed to the gym for a Friday morning workout that began with my 25 minute elliptical interval workout. I followed up my cardio session with “Workout C” from Tina’s Best Body Boot Camp.

I definitely felt the burn and I’m hoping my muscles aren’t crazy-sore for tomorrow’s race. I made sure to do a bit of stretching at the end of the workout, including some of my favorite hip stretches since I’ve experienced some light hip pain since late last week. (<— Hip stretch number five is a personal favorite.) The pain is nothing crazy by any means, but since I’ve had hip issues in the past, I’ve been a hip-stretching maniac for the past few days.

  • What is your all-time favorite stretch?

I love the pigeon pose. It feels incredible on my hips. I also really like the plow pose because I feel like a kindergartener playing on the floor while simultaneously stretching my back.

    Pigeon pose is my all-time favorite hip stretch. My hips {and, as a result, my lower back} get tight so easily and pigeon pose loosens everything right up!

    My new favorite stretch is bending down like I’m doing a lower back stretch (head close to the floor with legs shoulder width apart). Then reach to my left ankle with my right hand and pull back on the ankle so I stretch my shoulder blades. This makes a major difference in my sore factor after a strength workout!

    Pigeon pose is one of my favorite poses too! I love doing it with my front leg on the bed at night to get a good hip stretch in before going to sleep. Butterfly pose is another favorite – I feel like I’m 5 years old in gymnastics again!

    You’re a pancake pro. I’m seriously so impressed with your ability to come up with new pancake recipes! Teach me your ways! Haha.

    As far as hip stretches go, I’m a huge fan of the lying hip/glute stretch, since it’s the only one that’s actually ever done anything for my hips. I think my favorite stretch of all time, though, is one I learned through a yoga DVD. You stick your arms out in front of you with your elbows bent at a 90-degree angle so your fingertips are pointing up. Then you cross one elbow over the other (so, say, your left elbow is in the crook formed between the upper half of your right arm and the lower half of your right arm since it’s bent and all) and clasp your hands. Then you lift your arms up and push them away from your body. It stretches between your shoulders and it’s INCREDIBLE.     I love the glute stretch where you place your leg across the other while pulling up on the bottom leg (sorry sort of hard to explain). I also love rolling my ITbands (painful but effective)

    Those pancakes look so yummy! I love pumpkin flavored things! Have you ever tried pumpkin bagels (I believe Nature’s Own makes them)? They are sooo delicious!

    I love the butterfly stretch. My legs have been so sore lately, and I can’t get enough stretching in. How often do you foam roll? It really helps me a LOT, so give it a try tomorrow if you’re still feeling sore!

    I love plow pose once I get into it but I always get anxiety going into the pose. I have this irrational fear that I’m going to snap my neck or do a backwards somersalt or somthing.

    What are your thoughts in regards to NYC still holding the marathon when so many people have lost their homes and NY/NJ is still in deep devastation? I’m surprised you haven’t mentioned anything about the storm but please keep us in your prayers.

    Your pancakes look great! The last batch I made was a flop…oh well! I am running a race tomorrow too, so I made sure to attend a yoga class this morning. I love the plow and the pigeon as well, but my favorite stretches recently have been all sorts of shoulder openers!

    Oh I hope your hip feels better soon Julie! I also love stretching ’em with this position (works for me!): stand in a wiiide lunge like position and put your hands together way overhead. Then slowly stretch side to side and back. 🙂 Feels really good!

    Pigeon pose…I’m all about the hip stretches myself as it’s were I suffer if I don’t watch myself! I make a vegan pumpkin pancake with various different flours but the almost the same ingredients quantities…same flour, same milk (I use almond) but I use 2/3 cup pumpkin puree and leave out the egg as I’m vegan! Just if you ever run out of eggs! 🙂

    I don’t eat bacon anymore, but growing up we always microwaved it. Easiest way to cook bacon.
    Also, i’d try this method from Iowa Girl Eats (iowagirleats.com) ….seems fairly easy, little risk of grease burns and according to her makes it super crispy:
    Lay cold strips of bacon on a non-stick sprayed cooling rack over a foil-lined baking sheet then pop it in a cold oven, turn the heat to 400 degrees, and bake for 15-20 minutes or until crispy. This gradual-heat baking method renders out a TON of fat, which leaves the bacon super crispy. Drool. Drool, drool.

    They look good, if they’re anything like your protein pancakes they will be. I’m a big fan of calve, hamstring and hip stretches. I like the hip stretch where you’re on the ground and pushing forward!

    These pancakes were delicious & a HUGE hit w/ my hubby! I used almond milk instead of regular milk (don’t like milk, so I never have it on hand) & had to cook them on a medium flame (a 6 on my gas burner), low-medium was too low. Thanks for all of your wonderful recipes & workouts!
