Thai Chicken Lettuce Wraps

Thai Chicken Lettuce Wraps

Description
Thanks to simple preparation, this recipe comes together in less than 10 minutes!
Ingredients
- 2 tablespoons nut butter of choice (I used almond butter)
- 1 tablespoon milk of choice (I used coconut milk)
- 1 teaspoon tamari
- 1/2 teaspoon honey
- 1/4 teaspoon garlic powder
- sea salt to taste
- pepper to taste
- 4 large leaves romaine lettuce
- 1 cup shredded chicken
- 1 sliced bell pepper
- sliced pineapple
- 1 tablespoon fresh mint
- 1 tablespoon fresh cilantro
Instructions
- In a small bowl, combine the nut butter, milk, tamari, honey, garlic powder, salt and pepper
- Add the chicken and toss to coat
- Spoon the mixture onto the pieces of romaine and top with pepper, pineapple, cilantro and mint
- Roll up and eat like a taco

Note: I omitted the pineapple because I’m weird about combining pineapple and any kind of meat. I also added avocado because it’s awesome.
Simple, right!? And oh-so-delicious!
Simple is the key word I would use to describe the recipes and workouts in Gina’s new book. But don’t confuse simple with easy when it comes to the workouts! Just because Gina does a great job of explaining and simplifying exercises and providing modifications doesn’t mean the workouts found in HIIT It! won’t challenge you!
Gina is one of my closest blogging buddies and I could not be more thrilled for the release of her new book or more proud of my talented friend. She clearly poured her heart, soul and expertise into this book and it’s jam-packed with great information for those who already feel comfortable with their fitness routine and may be looking for a new challenge and those who may be brand new to exercise.
The underlying theme of HIIT It! is getting more for less. Seeing faster results from shorter (more intense!) workouts. Streamlining your meals to make healthy eating easy and sustainable.
Gina goes into great detail about the foundation of high intensity interval training (HIIT) in chapter one. She provides well-researched information that substantiates the quality workouts detailed throughout the book and provides photos that make it easy for a reader to see how to do exercises while maintaining proper form.
There are more HIIT workouts than I can count found throughout the book which can nearly all be done at home with a few pieces of equipment (dumbbells, resistance bands, etc.). The workouts in this book are also an awesome resource for the busy traveler!
The HIIT It! Diet section of Gina’s book is discusses nutrition in a sustainable way. Gina emphasizes the importance of eating nutritious foods (whole foods with an emphasis on protein and produce) and provides a bunch of simple snack ideas and recipes, like the Thai chicken lettuce wraps you see above. Some recipes that immediately caught my eye: Banana Almond Muffins, Breakfast Cookie Dough Cereal, Orange Honey Salmon and Butternut Squash Mac & Cheese. YUM.

Stir-fry is my go to! Chicken, frozen stir fry veggies with soy sauce, ginger, and chili sauce. Easy!
1) My favorite quick meal is ground turkey, spinach, garlic and 1/2 jar of spaghetti sauce.

My favorite quick meal is crockpot chili. You just throw it all in and let it cook. I always add extra beans and veggies.
My favorite go-to recipe is simple soup! Especially with how cold it’s been. I can whip up a pasta soup in 40 minutes and it feeds me all week!
My go to meal is always Spaghetti (easy meal to feed 2 toddlers!)

My easy go to is always chicken, onions and peppers cooked together. It’s easy when I’m in a hurry but taste amazing. Plus you can always add anything else you have on hand!
I love to whip up healthy crock pot meals this time of year, chicken fajita stew has been a go to.

My favorite easy meal is pasta- any type of noodle and a turkey meat sauce always do the trick! My mom gave me Skinnytaste for Christmas so HIIT It would be a good addition for workouts!

My go to recipe is chicken breasts in a crock pot, I put it in at noon during my lunch break from work and by 5 I have cooked chicken that I can do many things with, tacos, bbq, chicken salad, stir fry, possibilities are endless.

I NEED this in my life! I am unfortunatley stuck in the mindset of “more is more” and am over exercising and still not seeing the results I want! Crazy thing is… I know this is not the way to go about it but I am still doing it! #stubborn ha! I would LOVE this book it might be able to help drill it in my head more of “less is more”!!! 🙂
My go-to is chopping any and all veggies that I have that might be getting mushy and turning bad plus anything in the freezer with a carton of egg whites and a few whole eggs and baking into a frittata. Uses up all your leftover veggies from the week and is super quick and as healthy as can be!
My favorite easy recipe is turkey burgers! They can be assembled rather quickly with only a handful of ingredients. And can be grilled up easily on the George Foreman grill.
I love quesadillas because you can modify them so easily! I just started doing HIIT so this book would be great!
My favorite go-to meal is taco soup in the crockpot! I love how easy it is and magically in a few hours you have a delicious veggie-packed meal 🙂 I have heard so many great things about HIIT workouts and I think this book would be the best way to start trying lots of different exercises!

I tend to keep pre-cooked chicken strips that come in a bag stocked. I through them in a pan and sauté with veggies, or throw on top of quick salads. Pre-cooked chicken is my fav!

I love this recipe! So easy peasy. Mine is probably a healthy crockpot recipe (like sweet potato, quinoa three bean chili)
Hmm, they look great! I love fresh pasta with grilled aubergine and tomato-sauce with basil. So easy and good. And as the Italians do: always add a bit of the pasta cooking water to the sauce 🙂
