I began with my go-to granola ingredients that have served me well in countless batches of almond butter granola and peanut butter granola.
Nut butter + Oats + Honey
After microwaving the almond butter and honey in a microwave safe bowl, I stirred in the oats, ground flaxseed and a few mix-ins.
My add-ins of choice: Unsweetened shredded coconut, dried goji berries and chopped pecans.
Can you see how this recipe would be so easy to customize to your liking? Choose your favorite nut butter (I won’t judge you if you opt for Nutella, Biscoff or another kind of cookie butter) and then grab your favorite dried fruit, chocolate chips, chopped nuts, crushed pretzels or anything else that sounds like it would taste delicious in a granola bar.
I then transferred everything into a pan sprayed with cooking spray (just to help with easy removal) and pressed the oatmeal mixture down into the pan so everything stuck together. Then the pan went into the freezer for about 45 minutes before I cut the mixture up into granola bars.
I was shocked at just how delicious these bars tasted and enjoyed one for breakfast as well as an afternoon snack yesterday. I’m excited to play around with different combinations (I think a s’mores bar with mini marshmallows, chocolate chips and crushed graham crackers would be fabulous) and know this is a recipe that will resurface in our house many times in the future.

I love goji berries and they are actually a Chinese Medicine herb that we use frequently, so they have medicinal properties too:)

Love that it’s customizable and such a good idea. I also love how much flax you put in them. Totally going to do this (and try not to go ‘overboard’ with healthy ingredients haha)

Love this! I just made a variation of these earlier this week. I went with dried cherries, walnuts and a few choc chips! The ingredients are much better than premade bars!

I made these with my 3 year old during a snow day yesterday! S’mores – mini marshmallows, mini chocolate chips, and crushed graham crackers. Not the healthiest, but so tasty! I especially loved that it was a simple enough recipe that my little one could totally help me measure, mix, and form into bars. Up next is a healthier version with dried blueberries, almonds, and a little vanilla protein powder in the mix. Thanks!
Oh! I have to tell you that your pumpkin spice puppy chow mix has now become my go-to recipes for parties. Thanks so much for sharing all these awesome recipes with your readers!

Do you think they would turn out if you used less honey?

Those look really good. All that honey and coconut sounds nice right now. I may cheat and add some chocolate chips to them 🙂 Thank you.

I was so excited by this recipe! But I made them and they didn’t harden 🙁 I didn’t have any flax — would that make a big difference?

by any chance do you know the nutritional break down of these. I use weight watchers and wanted to know. They were very good! thanks

Julie, is there a good substitute for ground flaxseed? These look bomb! Thanks 🙂

I made these tonight and switched it up by using chopped almonds, dried cranberries, and dark chocolate pieces!
Can’t wait to dig into ’em tomorrow morning.

hi, i’ve tried this recipe but my bars are coming out crumbly. do you have any suggestions on how to make them stay together? i thought the peanut butter and honey would be enough to bind them. thanks x
