No Bake Easy Customizable Granola Bars

On Sunday afternoon, about an hour before we were about to leave to attend a friend’s Super Bowl party, I decided to quickly throw something together for Monday morning’s breakfast since I figured we’d be out late and I wouldn’t be in the mood to make anything that took much effort the following morning. Honey Dijon Cedar Plank SalmonTypically I would prep a batch of overnight oats, but I wasn’t in the mood for them at all and decided to use the oatmeal we had on hand another way. The end result was a batch of no bake easy customizable granola bars!

No Bake (and Easily Customizable) Granola Bars

I began with my go-to granola ingredients that have served me well in countless batches of almond butter granola and peanut butter granola.

Granola Ingredients (2)

Nut butter + Oats + Honey

After microwaving the almond butter and honey in a microwave safe bowl, I stirred in the oats, ground flaxseed and a few mix-ins.

Healthy Granola Bar Ingredients

My add-ins of choice: Unsweetened shredded coconut, dried goji berries and chopped pecans.

Homemade No Bake Granola Bars

Can you see how this recipe would be so easy to customize to your liking? Choose your favorite nut butter (I won’t judge you if you opt for Nutella, Biscoff or another kind of cookie butter) and then grab your favorite dried fruit, chocolate chips, chopped nuts, crushed pretzels or anything else that sounds like it would taste delicious in a granola bar.

I then transferred everything into a pan sprayed with cooking spray (just to help with easy removal) and pressed the oatmeal mixture down into the pan so everything stuck together. Then the pan went into the freezer for about 45 minutes before I cut the mixture up into granola bars.

I was shocked at just how delicious these bars tasted and enjoyed one for breakfast as well as an afternoon snack yesterday. I’m excited to play around with different combinations (I think a s’mores bar with mini marshmallows, chocolate chips and crushed graham crackers would be fabulous) and know this is a recipe that will resurface in our house many times in the future.

Description

Choose your favorite nut butter (I won’t judge you if you opt for Nutella, Biscoff or another kind of cookie butter) and then grab your favorite dried fruit, chocolate chips, chopped nuts, crushed pretzels or anything else that sounds like it would taste delicious in a granola bar.


Ingredients

Scale
  • 1/2 cup nut butter (I used almond butter)
  • 1/2 cup honey
  • 1 cup old fashioned oatmeal
  • 1/2 cup ground flaxseed
  • 1/4 cup shredded coconut
  • 1/2 cup chopped nuts (I used pecans)
  • 1/2 cup dried fruit (I used goji berries)

Instructions

  1. Microwave nut butter and honey until warm, approximately 30 seconds. Stir together.
  2. Stir oatmeal into the nut butter and honey.
  3. Add coconut, dried fruit and chopped nuts. Stir in the ground flaxseed.
  4. Press the mixture into a pan sprayed with cooking spray and freeze for 45 minutes.
  5. Cut into bars and enjoy. Store remaining bars in the refrigerator.

    These sound so yummy! I would much rather make my own granola bars then spend a bunch of money on the processed ones at the store, at Luna bars haven’t made it to Iceland yet anyways so this recipe will be perfect!

    Homemade granola bars are the best! I love that you can customize them as well. I made granola bars not too long ago that are very similar to these. I included dried apricots, chia/hemp seeds, prunes, and sunflower seeds in them, and they are delicious!

    I’ve been making a recipe very similar to these, except I roll them into balls and call them “energy bites!” My favorite additions are coconut, pecans and dark chocolate chips.

    Would leaving the flaxseed and coconut out do anything drastic to the recipe?

      The ground flaxseed works almost like a flour so if you remove that they might be a little sticky. You could always increase the amount of oats- that might help!

    I love how easy this recipe is! My husband is a HUGE granola bar fan, but the nicer ones (aka the ones without all the crap ingredients) can definitely get pricey. This would be a great way to get in his granola bar fix without going broke. Plus, like you said, so many customization options! Thanks Julie!

    Ironic I just did a similar mixture with my old Justin’s hazlenut chocolate spread, oats, and flax with a little Hershey special dark cocoa and ideal sweetener. The honey might give it a more useable consistency! It was good either way though! I want to try your combo also though!

    This bars look amazing and I cannot wait to make them. I think you based on all of your other recipes that you would really love this grain-free porridge! It’s filling and great before morning workouts…I top with chia seeds and berries 🙂 Hope you enjoy!!

    wow, I never thought to just stick to nut butter, honey, and oats as a basic recipe for granola bars. I guess sometimes the simple things work best. I can’t wait to try this out, I love how easy it is to readjust the size of the recipe too.
