Edamame Black Bean Salad

This recipe for edamame black bean salad is an easy one that is absolutely bursting with flavor and color. It requires minimal chopping and is always a crowd pleaser. Enjoy is as a main dish, side dish or a dip with crunchy tortilla chips! Originally shared in 2014, the photos recently got a little refresh so I’m excited to share it with you again today!

This edamame black bean salad started out as a quick and simple dish that I made for a party. I wanted to bring a dish that could double as dip and a side dish and this edamame black bean salad fit the bill.

As I started combining ingredients and spices, my mouth started watering. Everything looked so fresh and vibrant. One taste told me that this edamame black bean salad recipe was going to become a go-to for me for years to come!

Edamame Black Bean Salad

Though there are a lot of colorful ingredients in this salad, the chopping and work required is very minimal. This edamame black bean salad is the kind of dish you can easily throw together in less than 10 minutes.

Here’s everything you need to make it:

  • Black Beans
  • Edamame
  • Corn
  • Tomato
  • Avocado
  • Green Onion
  • Cilantro
  • Olive Oil
  • Lime Juice
  • Salt, Chili Powder and Cumin

Though I love it as is, it’s also wonderful topped with grilled salmon or shredded chicken. I hope you all enjoy this one as much as I do!

Description

This recipe for edamame black bean salad is an easy one that is absolutely bursting with flavor and color. Enjoy is as a main dish, side dish or a dip with crunchy tortilla chips!


Ingredients

Scale
  • 1 can reduced sodium black beans, rinsed and drained
  • 1 cup edamame
  • 1 cup fresh or frozen corn (raw sweet corn cut directly off the cob may also be used)
  • 1 tomato, diced
  • 1 avocado, peeled and diced
  • 1/2 cup chopped green onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  1. Combine all ingredients and stir
  2. Serve cold with tortilla chips or on its own as a salad

    Looks great! In the picture it looks like there is some kind of dressing on it. Did you use any oil or anything like that?

        I have a similar recipe that you would love. But my recipe calls for 1 chopped red onion,,1 chopped red pepper and 10 oz. of Monterey Jack cheese cut into cubes. The dressing calls for 1/3 c. red wine vinegar, 1/4 cup olive oil, 1 tsp. sugar, 1 garlic clove , salt and pepper to taste. My recipe doesn’t call for edamame , green onion, tomato r cumin.

    I make the exact same thing, it’s my signature dish to take to parties, everyone loves it. I’ve never added edamame, but I will from now on. Yum!

    My family makes something similar called ‘Cowboy Caviar’ but never with edamame, sounds like a good addition! I love anything with a little cilantro in it.

    Edamame caviar! This reminds me a lot of a salad I used to get at Kroger called edamame caviar. I replicated, but it’s a little less Mexican-y than this salad:) Either way – delicious!
